Most versatile food ??

For me - I've found the most versatile food is cauliflower.  As a child this was the most hated of vegetables for me.  I would put it into the pockets of my cheeks and go spit it out in the garden.  Bleah.....

Years later I could tolerate it in cheese sauce or with tomato (ketchup to you lot) sauce, but now I use it as 'rice', 'mashed potato', in soup, fritters and with cheese sauce.  I know you can use it as 'potato salad' but that one still eludes me.

What's your favourite or most versatile food?
