My first choice would be CHOCOLATE CAKE, then carrot cake, then anything that would be low carb to stay on the program.  The tastykake chocolate cake (2 carbs) has helped me to have a dessert when I am at a social but would not make a great "presentation" for a birthday cake at a family or work party.
I may end up buying something that the majority would eat and then eat the tastykake for my dessert.  Looking forward, Umpa, to some of your great recipes and the book!  Thanks and have a great day!

Okay SouthCarolinaLady you gotta tell me what recipe you want for your birthday cake???Chocolate cheesecake????Chocolate Cake or both?hehehehe!Or something totally different!I can't do carrot though! Let me know and I will send a recipe  :)

Thanks for helping me with this decision.  I have not heard of some of the "recipe ingredients" that I have read on line.  My husband grills alot of meals and he like to bake too.  I'm the "preparer-chopper/dicer/etc. partner",  "cleaner-upper" person and the taste-test judge too! :D  Hubby has never had a "weight issue" -- lucky, blessed guy!  THANKS UMPA !!!  P.S. Will there be "icing" too ?

Hey Umpa,  Normally I would say "butter cream" icing, but Philadelphia cream cheese icing or a great chocolate icing sound good.  I'll check your post on Monday to see what "surprise" you sent me!  Thanks!  Make it a great day!!!  :D

Triple Chocolate Cake for Susie!

OK Susie, Umpa has done it! She has come up with an absolutely delicious sugar free fudgey chocolate cake with creamy chocolate frosting sprinkled with homemade chocolate morsels  ;D ;D ;D IT IS SOOOOOO GOOD!!! Here are the pictures, she'll post the recipe as soon as she can! In the meantime get your mouth watering!  ;)

Chocolate birthday cake for SouthCarolina Lady  3.38 carbs per serving

Pre heat oven to 350 grease 2 eight inch rounds (i used a bundt pan because I didn't have cake pans)
One cup xylitol
1 ¾ cup soy flour
¾ cup  unsweetened cocoa
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 eggs
One cup unsweetened vanilla almond milk
½ cup vegetable oil
2 tsp vanilla extract
One cup boiling water

Mix dry ingredient
Add wet one by one mixing between wet ingredients  after all ingredients are added mix 3 minutes
Pour into pan 2 eight inch rounds
Bake for  30-35 minutes or until toothpick comes out clean.

Let Cool
 Frosting
2 boxes of cream cheese
1/4 cup chocolate coffee syrup(or what flavor you like)
2 packs stevia
3 tablespoons unsweetened cocoa
Soften cream cheese while cake is cooling.Put cream cheese in mixer and beat well.Add rest of ingredients and whip in mixer to desired consistency.If frosting is too thick add more syrup )Spread on cake.

HEY UMPA !  THANK YOU SOOOOOOOOOOO VERY MUCH FOR CREATING THIS CAKE FOR ME!!!!!!!  I AM 'TEARING UP' AT WORK JUST THINKING ABOUT YOUR HARD WORK AND WONDERFUL BIRTHDAY PRESENT TO ME!  I am soooooooo excited to try this real soon.  I just bought the xylitol and now I need to buy the soy flour.  The picture of the cake looks delicious and I really can't wait to try it!
