Almond Brownies

They are YUM!

Ingredients

    * 1/2 cup Butter or Margarine, melted  
    * 1/2 cup Cocoa, unsweetened
    * 3/4-1 cup Xylitol
    * 2 Eggs (2 carbs)
    * 1 tsp Vanilla
    * 1.5 Tb Corn Starch (12 carbs)
    * 1/2 cup Almond Meal/Flour (6 carbs)
    * 1/2 tsp Baking Powder
    * 1/4 tsp Sea Salt
    * 1/4 cup heavy cream

Directions
Preheat oven to 350F. Grease a 9-inch square pan; set aside. Combine the melted butter and cocoa, stirring to combine. Add sugar, eggs, cream, and vanilla and beat until smooth. Add the flours, cornstarch, baking powder and salt and mix to combine. Spread into the baking pan and bake about 20 minutes. Makes 9 brownies. 2.2 carbs each.

I wonder what would happen if you made these without the corn starch?  I might try it replacing the corn starch with soy flour and will let you know.  I have all the ingredients except the corn starch.  :-\

Maybe guar or xanthan gum would be a better low carb substitute?

I made these and substituted Guar Gum for the cornstarch.  They were great!!  It brought the carb count way down as well as my almond meal was 4 net carbs per 1/2 cup.  1.2 for the 2 eggs, .8 for the vanilla, 4 for the almond meal, .6 for the baking powder.  I counted 6.6 for the whole recipe divided by 9 pieces = .73 per brownie.  Yum!!

I also had the same idea to lower the carb. content. So I used 2 teaspoons of Xanthan Gum. Can we say rubber brownies?! :o Did that keep my husband and I from eating them? Of course not!!!!! Now I will start much slower and try 1/4 teaspoon of the xanthan gum.

Back from Boston?  :o  So excited to purchase the Bakery Book - hurry back Doug!! lol!! This book is like Christmas all by itself!!  ;D

is this a download recipe book???  cuz lol i need help --- have to make party items in may (including 2 cakes) for twin nieces 8th grade graduation/confirmation parties --- so I've also been looking for party foods/desserts  ???any help umpa with a decorator type frosting ???

There are some beautiful cakes in the Bakery Book 3Angels or you can go to the homepage and ask umpa.When I wrote the Bakery book I made it easy enough for kids.You are really gonna enjoy it! :)
