Chinese Fried Cauli Rice....double yum! :)

Last nights dinner was my Korean Ribs and Chinese Fried Cauli Rice and it was spectacular.

1 head raw cauliflower
4 chopped scallions (green onion)
1/2 cup chopped shrimp or chicken or pork
1/2 cup finely shredded green cabbage
1/3rd cup sugar free teriyaki sauce- 5 carbs total, page 137 product guide- http://www.netrition.com/seal_sama_sf_teriyaki_sauce.html
1/4 stick butter
2 beaten eggs
salt and pepper to taste

Using your food processor cheese grater blade (grindy thing Beebs) drop the raw cauli florets through the shoot. Melt the butter over medium heat and cook the eggs scramble style, remove the cooked eggs and set aside. Saute the meat or shrimp until half done. Dump in all the other ingredients accept the teriyaki sauce and the cooked eggs, stir well, cover and bring up to heat. When you see steam in the pot remove from heat and leave covered 5 minutes. Uncover the pot and stir in the sauce, now mix in the eggs,  salt and pepper to taste and serve.

Yum love Chinese rice.  How many carbs Doug?  Poor Beebs the more I am on line here the more I see her getting teased.  You are a GREAT sport Beebs!

I've been making my own teriyaki sauce for years before I started low carb. I've made it low carb but want to perfect it now. when I do I'll post recipe.

Made my own teriyaki sauce but it's not what I wanted, still perfecting it, and made 1/2 batch of this Chinese Fried Cauli Rice. Instead of butter I used sesame & olive oil. Was so delicious!. Stir-fried chicken, broccoli, sliced mushrooms, bean sprouts and red bell pepper too.
