Bread and butter pickles

I love bread and butter pickles but, of course, they have sugar in them  :-\... I did find a sugar free jar at my local dollar store but only ONE!!  It was zero carbs and very low cals.  Does anyone know where I can find more of these they were delish!!  I might even try making some if I had a SF recipe... Umpa, have you tried this?  ???  ???  ???

The only brand I have been able to find is Mt. Olive No Sugar Added Bread & Butter Sandwich Stuffers.  Total carb = 1g for 1 oz (about 1 1/2 slices).  I believe I found them at Publix.  Deelish in a chicken tortilla - today's lunch!!

Very simple....buy a jar of the lowest carb pickle slices you can find. Melt a tablespoon of xylitol in a bit of hot water and mix it into the pickles. Three days later.....BAM! bread and butter pickles :)

Thanks to BOTH of you!  So starting with sour/tangy dill pickle chips works!? I'm gonna try it for sure!

Most grocery stores do not sell it. I have purchased it at two health food stores as well as ordered it online.

Do you think just swapping out the sugar will work with these?

Refrigerator Pickles
1-1/2 cups distilled white vinegar
1/4 to 1/3 cup granulated sugar
4 teaspoons kosher salt
1 teaspoon mustard seeds
1 teaspoon coriander seeds
3/4 teaspoon dill seeds
2 cups hot water
2 pounds kirby cucumbers, sliced 1/4-inch thick
3/4 cup coarsely chopped fresh dill
3 cloves garlic, coarsely chopped

Directions:
1) Combine vinegar, sugar, salt, mustard seeds, coriander seeds and dill seeds in a heatproof bowl. Add hot water and stir until sugar dissolves and liquid is clear. Cool to room temperature.
2) Place cucumbers, garlic and dill in a large bowl. Toss to combine. Pour brine over all and turn to coat cucumbers. Cover them with a plate to weigh them down and keep them covered in brine. Cover bowl with plastic wrap and refrigerate overnight, stirring once or twice. Transfer to an airtight container and store for up to two weeks. Yield: 1 quart.

Oh, that's much better than making my own! Mt. Olives is going on the list!!! (Thanks, TooSweet!)

I made the Coconut Cake today using Zero - it was/is great! I put in some mayonnaise and it was super moist and tasty! I put strawberries and whipped cream on top and took it to company dinner.

That sounds good Sarah!  I haven't had a coconut cake for a while.... I think I will hit the kitchen today   ;D   I can't decide if I want to make that or the pound cake that I saw on another post.  I've made both and they are so good......  Love to use the mayo though...it works great to add that needed moisture.  I'll remember to add that in as well...thanks for the reminder  ;)


The Mt Olive sugar free are sometimes hard to find though.... One store might have the baby gherkins and relish and another might just carry the bread and butter....grrrrr  It gets frustrating sometimes   LOL
