Finally got around to making these. I used xylitol to sweeten. My cheddar disappeared so I did half Swiss & half Pepper Jack. Yummy!   :)

I put the muffins on a cooling rack to let some of the grease drain off & then patted them with paper towel before freezing. I may par-bake the sausage cups and drain some of the grease next time. I don't know if my sausage was extra greasy or not. First time I used this brand. Still yummy.

I used a 1 pound tube of Jimmy Deans :) Morgan, you can make your own breakfast sausage carb free with this recipe;

Delish Zero Carb Sausage

Ingredients

   2 teaspoons dried sage
   2 teaspoons salt
   1 teaspoon ground black pepper
   1/4 teaspoon dried marjoram
   3 drops FAT TO SKINNY Zero Sweetener
   1/8 teaspoon crushed red pepper flakes
   1 pinch ground cloves
   2 pounds ground pork

Directions

1- In a small, bowl, combine the sage, salt, ground black pepper, marjoram, Zero Sweetener, crushed red pepper and cloves. Mix well.
2-Place the pork in a large bowl and add the mixed spices to it, mix well with your hands,
3- At this point you can form into patties or run through a sausage stuffer. Cook patties 5 minutes per side.
