No-Bake Coconut Cream Cheesecake Bars

No-Bake Coconut Cream Cheesecake Bars
1 8oz package cream cheese (8 carbs)
2 tablespoons coconut oil (0 carbs)
1 tablespoon warm water
1/2 cup heavy whipping cream (0 carbs)
1/2 cup shredded unsweetened coconut (8 carbs)
1/4 - 1/2 cup xylitol to taste (0 carbs)
1/8 teaspoon salt (0 carbs)
1/4 teaspoon pure vanilla extract (0 carbs)
1/4 cup finely chopped walnuts (2 carbs)
Additional 1/8 c unsweetened coconut for garnish, if desired (2 carbs)
Put the cream cheese and coconut oil in medium mixing bowl and let stand to soften.
In a separate bowl, add the tablespoon of warm water and about half of the heavy cream to the coconut to moisten it.
Once the cream cheese and coconut oil has softened, beat the cream cheese mixture and gradually mix in the xylitol, salt and vanilla extract. Gradually beat in the remaining heavy cream, then the coconut. Beat until light and fluffy.
Crust: Sprinkle the chopped nuts over the bottom of an 11 X7 baking dish.
Use a smaller dish if you want thicker bars
Spoon cream cheese filling onto crust
Sprinkle 1/8 c unsweetened coconut on top to decorate, if desired
Cover and refrigerate until firm.
Total carbs =20 (or 18 if you do not use 1/8 c unsweetened coconut for garnish)

xylitol is a sweetener made from birchwood,that in its purest form has 0 net carbs:)

Most stores that specialize in supplements carry it.  I think it is also used to improve intestinal flora.  It doesn't sound yummy but it has a wonderful sweetness
and it takes less of it to sweeten than sugar.

From the home page type xylitol into the search bar on the right. Every post with xylitol in it will come up, here you'll find other peoples posts where they have bought xylitol.  ;)

Can I use the sweet & low liquid sweetner 0 carb for xylitol . I just dont have the money to buy all this new stuff . I know once you get it it will last awhile.  But it s a little costly at first.

Also, while you're answering these questions, umpa...here's one more general baking question :)

In your experience converting SUGAR recipes to FTS recipes, do you have any guidelines for how to replace sugar with xylitol?  Is it literally cup for cup?  Or do you find you need a bit less/more xylitol than sugar?
