MOCK DANISH
2 oz cream cheese (softened in microwave)
1 egg
1 tsp vanilla
1 T. sugar replacement
1 tsp lemon juice
Soften cheese in micro; blend in remaining ingredients and stir until smooth. Microwave 1-2 minutes until center is set.

I omitted the vanilla, sugar, lemon and replaced with a few fresh sliced strawberries/blueberries and added S/F Torino vanilla or raspberry syrup for sweetener. (If strawberries were sweeter, I don’t think I would need the syrup). I just mixed and nuked in a cereal bowl the first time, the second experiment I put in plastic cups (individual applesauce cups) – these only took about 60-70 seconds to cook. Carbs in my version looks to be about 3 ½ (cream cheese says <1g for 1 ounce, so I estimated 2 oz to be 1 1/2g; egg=1; strawberries approximately 1g)
Another variation I will try soon is to add 1 T of S/F maple syrup/extract to cheese/egg mixture, nuke, and top with syrup and cinnamon – sorta like French Toast.
These are good warm..., these are good cold, as a dessert..., and they are REALLY good topped with reddi-whip followed with a drizzle of S/F Hershey chocolate/strawberry syrup... yummmmm!!
