Low Carb Pork Rind Pancakes

You Won't Believe It's Not French Toast

Serving Size: 1


-= Ingredients =-
1/2 bag unflavored pork rinds - (3-oz bag) grind very fine
2 eggs
1/4 cup heavy cream
4 drops FAT TO SKINNY Zero Sweetener
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract ; (optional)

It made 6 pancakes /2 carbs for all

-= Instructions =-
Crumble pork rinds up until they resemble bread crumbs (use your food processor if you like -- or put them in a Ziploc bag -- air removed -- and roll them with a rolling pin). Set aside.

Beat eggs well and then mix with remaining ingredients and beat again. Add crushed pork rinds to the egg/cream mixture and allow to sit for approximately 5 minutes. Mixture will thicken to a "gloppy" phase during this time.

Meanwhile, heat skillet or griddle with butter or oil, and when hot, fry pancake style until golden brown on both sides. Serve with your favorite low-carb maple syrup (DaVinci, Keto, Atkins, Howards, etc, etc.)

If you don't tell someone who eats them, they will never have a CLUE that these little French toast pancakes are made with pork rinds. And everyone loves 'em. Really. Yeah, really. Would I kid you?



Extremely Important Notes: The pork rinds must be a good brand with an extremely bland taste. In my area there are 4 or 5 brands available, but only 2 of them are really "puffy" and contain very little pork-rindy-taste. They are Baken-ets (Frito-Lay's national brand) and Huffmann's (a local brand). Rinds that are super crunchy don't work well for this. It's also important that they be very well crushed -- just one step above dust.

Also, remember to let it really get to its "gloppy" phase and don't rush it. Plus, make sure the skillet is hot before you start adding the mix -- with just enough oil to moisten bottom of pan but not enough to fry chicken in.

I just fixed these for breakfast. Delicious! I topped with a few fresh strawberries and some sugar free whipped cream. Who would a "thunk" it.....using pork rinds to make "french toast!" I used the Frito Lay Baken-et brand of pork rinds. VERY filling! Will make these again.  :)

Oh, I am SO happy that you are trying the recipes and liking them!   Isn't it amazing?  It just tickles me at what we get to eat and still lose weight!   ;D

These are good but the flax or almond flour ones are better may have a few more carbs just count them up

I haven't tried these with the pork rinds, but I make the flax seed ones all the time.  I LOVE them!  The texture reminds me of the whole grain pancakes at Ihop.  Don't feel like I'm missing a thing!  ;)

Jan, where is the pancake receipe with the flaxseed as an ingredient? Besides the one with pork rinds, I fixed the one by ausgirl dated Feb 23, 2011 with the almond flour. Both were great, but am wanting to try others. Just give me the persons name and date of the submitted receipe. Thank you!

This is pretty good actually. It's the 2nd time I've made this pancake. It made one nice serving for me in 1 pancake that was 6 inches in diameter. Gonnagetthere says it gave her six, but they had to be very tiny. Either way your still getting the same amount and it's pretty good.  ;D
