Sugar Cookie Bars
« on: February 20, 2012, 10:47:34 AM »
I keep seeing these all over Pinterest and they're killing me. I would love to know if you can work your magic and make them FTS friendly? Remember though we can't use almond flower at my house due to my kiddos treenut allergies. I would love to make these for him now that he is totally on FTS. Do you think it's possible??

Sugar Cookie Bars

Servings: about 18 bars

Ingredients

For the cookie bars:

1 cup unsalted butter, at room temperature

2 cups granulated sugar

4 large eggs

2 teaspoons vanilla

5 cups flour

1 teaspoon salt

1/2 teaspoon baking soda

For the frosting:

1 cup unsalted butter, at room temperature

1 teaspoon vanilla

Pinch sea salt

4 cups confectioners’ sugar

5 tablespoons milk

Food coloring, as desired

Sprinkles, for garnish, optional

Wow!... :o :o :o With 6 cups of sugar and 5 cups of flour, I wonder what the carb count is on these?
That's a frightening thought!
If I tried to eat one, my gut would be doing back flips for days! :P :P :P

But if anybody could make this recipe healthy and FTS-friendly, Umpa can! ;D
What you do today is what matters!

They were talking on the site about using a cookie sheet with sides, so that's pretty huge. I would probably make them in a 9x9 pan and that would be MORE than we need. Thank you for working this one out, Danny will be thrilled with the cookie surprise!

Sherri substitute soy for the almond flour. This makes a big pan :)
Frosted Cream Cheese Sugar Cookie Bars

3/4 cup xylitol
1 stick butter flavored crisco
8 oz cream cheese, softened
1 egg

2 teaspoon vanilla
1 teaspoon baking soda
2 teaspoon baking powder
2 1/2 cups almond flour (sherri use soy flour for your son)
FROSTING:
1/2 cup butter softened
4 oz cream cheese, softened
1/4 cup whipping cream
1 teaspoon vanilla
FAT TO SKINNY ZERO Sweetener- 6 drops
red food coloring 1 drop to make pink
Preheat oven to 350.
Spray cookie sheet with Pam
1)   In a large mixing bowl or stand mixer beat the butter crisco, cream cheese, xylitol, and egg until nice and frothy. About 4 minutes.
2)   Add the vanilla extract and beat for 1 minute more.
3)   In a small bowl combine the flour, baking powder and baking soda. Mix them around so that all ingredients are well incorporated.
4)   Add the flour mixture to the butter mixture and beat for about 2 minutes.
5)   Spread the dough  into a large jelly roll (cookie sheet) pan.
6)   Bake at 350 degrees for 30 minutes. Let the pan cool completely for one hour.
Frosting
1)Put cream cheese in mixing bowl.  Turn on mixer and whip  until mixed well.
2) Scrapes sides of bowl and add whipping cream, vanilla ,and succralose. Mix well.
3) Spread on cake. Store in fridge .

Thank you Umpa for making this recipe for us, they look really fun. I am taking my first real estate exam tonight (AHHH!) and then I am going to come home and make them. My question, since we don't have FTS sweetener yet how much xylitol should I use on the frosting??
