Pumpkin Pie Omelet

I found this on the netrition site

Pumpkin Pie Omelet

1 large egg, beaten
1T butter
2 pks Splenda (or use xylitol for no carbs)
2T pumpkin puree
2T cream cheese (softened or melted)
1/4 tsp pumpkin pie spice

Beat egg with 1 tsp water and 1/2 pk Splenda. Mix pumpkin with all but a dash of the spices and 1 pk Splenda and set aside. Mix cream cheese with the dash of spices and the remaining 1/2 pk Splenda and set aside. Heat butter in a small non-stick skillet and pour egg in, rotate pan to spread. Once the egg has set, spoon the pumpkin mixture on one side and flip the other half of the omelet to cover the filling, then spoon the cream cheese mixture on top. Turn off heat and cover pan, let it sit for about a minute to warm the filling and cream cheese through, then remove to a plate and enjoy. You can sprinkle it with more spice if desired.

282 cals; 3g carbs; 1g fiber; 9g protein

** For increased protein value, add 1 - 2 tablespoons of a unflavored protein powder to the pumpkin and stir it in really well.

For some reason, that sounds like a bad combination to my taste buds. I'd love to hear from anyone who tries it if it tastes better than it sounds when you first read it.  I will say this: It is very creative.

Izzet have you tried it?
That's an interesting combination of items.  Do you think it would be like an egg muffin kind of taste, or like the OMM without the almond meal (taste wise anyway).  Maybe I'd mix the pumpkin into the egg before cooking it . . . or maybe mix the pumpkin and cream cheese together . . .? or mix everything together, cook and pour on some maple syrup? Mix it and bake in a water bath like a custard? Just thinking outloud . . . not being too much of a pumpkin fan I'll wait for you more adventuresome cooks.

Umpa, I was trying to figure out what else to do with it. (bake like a custard) I don't know about the pumpkin filling in an omelet, but the more I think about it, it works for empanada's so why not in an omelet too. I'm waiting for Izzet . . .  :)

It actually is a nice combination of flavors...even my husband liked it albeit still sounds strange! lol :)  I would put just a little sweetener and pumpkin pie spice in the pumpkin but overall a nice change of pace. Next time I might mix the pumpkin, cream cheese, spices and sweetener and make that the filling and see how that works.

By the way Izzet doug told me what you said about organizing the recipe section into breakfasts,lunches,dinners,and desserts.I thought it was a great idea and soon as I finish up the Bakery Book I will do that.It really has gotten big ,quick!Thanks for the suggestion!
