Boy! The things you learn!  These are great things to know! Tomorrow I'm doin some breakfast cookin! Tina, that sounds delish! Shawn, thank you for the info! The zip lock omelets are fun and taste better than the regular ones. For a group, you put out all the makings and everybody makes their own just the way they like em. Write your name on your bag and pop it in the boiling pot for about ten to twelve min. You can google ziploc omelets.

Tina those sound really good  ;)  I like to use the egg beaters with these just to lower my cholesterol.  Makes it pretty easy to just pour it in...LOL   One question though:   What is a Texas muffin pan??  (Just a guess...is it bigger than a regular one?)

Sarah that is just to cool.  I think I'll give that a try, especially the next time the Hubs and I go camping.   :D

I had never heard of a Texas muffin pan either but saw it in a baking section. It's just a 6 muffin baking tray and yes they're a little bigger. I filled them about 1/2 way with the egg mix and turkey and they blew up like little soufflés. Lol. Then shrunk down like a regular muffin size.

I thought so  LOL  the Hubs is from Texas and I'm always hearing that everything is bigger in Texas  ;)  I wonder now if he may be right  ;D ;D  I have three sizes of muffin tins but never noticed if one was called a Texas muffin.... hmmm  makes me curious now

I made these this week and they are great cold with a bit of mayo on top....kinda like a deviled egg gone nuclear!  :o

Just be sure to use FREEZER bags or double the regular bags because the heat will make the thin ones break.

Gosh, all this talking about omelets - I made them in the silicone cupcake forms - took 2 cups per egg mixed with cheese, mushrooms, spinach and peppers. They sure looked pretty! Nice and puffy. Oh, and tasted pretty good, too.

Here's a picture of the ones I made this weekend, I used Capicolla (hot Italian ham ) as the muffin cup.

The silicone cups worked fantastically as omelet cups - I'd post a picture so you could see how beautiful they were, but I already ate them all. They were BEAUTIFUL! Maybe I'll take a picture next time and then you'll want to make some too. 1 egg made 2 muffin cups worth and they puffed up ... so pretty!

Hi romarc! :)

When I made them, I cooked the bacon a bit over 1/2 way (just before crispy) to render much of the grease.

The first time I made them I didn't.
They were WAY to greasy for my liking.
