I've got everything for this recipe except the vital wheat gluten.  Where do I find that?  Supermarket?  Health food store?  Thanks.

I found mine in my local grocery.   It was in with the gluten free items (funny) and specialty flours.  I would imagine any health food store would have it as well though.  This is the one I have http://www.amazon.com/gp/product/B000FDMLVS/ref=pd_lpo_k2_dp_sr_2?pf_rd_p=486539851&pf_rd_s=lpo-top-stripe-1&pf_rd_t=201&pf_rd_i=B0006ZN52E&pf_rd_m=ATVPDKIKX0DER&pf_rd_r=1HVH29DC53V1HF80RTC9 (http://www.amazon.com/gp/product/B000FDMLVS/ref=pd_lpo_k2_dp_sr_2?pf_rd_p=486539851&pf_rd_s=lpo-top-stripe-1&pf_rd_t=201&pf_rd_i=B0006ZN52E&pf_rd_m=ATVPDKIKX0DER&pf_rd_r=1HVH29DC53V1HF80RTC9)    ;D

The yeast feeds on the gluten so don't leave it out ;)

Red Star active dry yeast - probably can't get my hands on it so can I use ordinary dry yeast?

The Red Star is just one of the brand names here in the states Morgan.  It is just one brand that is readily available in most grocer's that isn't just in those little pre-measured packets.  It's easier to use when you need more than just a few tablespoons at a time.  I'm sure any brand would work  ;)

And we have a winner...

It does have a bit of a flax taste so the kids were not loving it (which is ok since it has zero in it and I don't want them eating it).  Toasted some up this morning with a little cream cheese and sugar free fruit spread.  Yum.

I love that bread toasted, like every other replacement recipe we've come up with there will be a little different texture and flavor but a great and healthy replacement. After enjoying Caulimash could you ever see yourself going back to mashed potatoes? New habits forming for a lifetime  8)

Been looking for Golden Flaxseed Meal Flour.  I have found the meal, but will I have to mill that to turn it into flour?  I have a nutribullet that has a milling blade. So that wouldn't be a problem.

I have golden flax seeds and can get more very reasonable in bulk at a store. I'm going to use my Ninja to try to it turn into flour.

How does it equal 1/2 carb/1 inch slice?

0 carbs - 2 cups hot water
8.1       - 1/3 cup dry yeast (54g)
0          - 5 cups golden flax
8.0       - 2 tablespoons baking powder (40g)
6          - 1/4 cup vital wheat gluten
0          - salt
0          - 24 drops zero
1.4       - 2 eggs

= 23.5 total

I don't think the loaf is going to be that big to equal 1/2 carb for an inch slice.

Well, due to my great culinary skills (make that due to my lack of great culinary skills), I have a 23.5carb/1.2 kg brick.  What did I do wrong?  It did not rise at all. The ingredients were all fresh.  Followed instructions to the letter.  Should there have been a kneading session in there somewhere?   Hoping it still tastes alright and will pass it off as 'crispbread/cracker' something, sliced very thinly.

Hi Morgan, we use Argo baking powder which is zero carbs and end up with 8 net carbs for the loaf. The problem with your loaf is that it didn't rise. Did you allow your yeast to bloom (become all foamy) prior to adding the other ingredients? That's the only way to test to yeast to make sure it's alive and active.

Bloom it did. There was no carb count on the packaging so I go by the generic value in a carb counter.

So the yeast was good.....hum...did you let the loaf rise for 30 minutes prior to baking?

Yep.  After the mixing and when I put it in the tin it felt like a 'brick' not like kneaded bread.  Hard and unyeilding.  Let it sit for about 40 mins, but didn't rise at all, so since I couldn't do anything else, I baked it.  It turned out really dense - reminded me of pumpernickel with rye coloring.  Doesn't taste that bad sliced really thin.

I contacted the company that made the baking powder - why is it that they add rice flour?
Surfing a few internet sites you can make your own by adding Bicarbonate of Soda (0 carbs) and Cream of Tartar (61.5c/100g) - 1 part bicarb with 2 parts cream of Tartar.

May try making it once again and see what happens.

I have been trying to work out how you would get zero carbs for argo baking powder (even if they used the bicarb/cream of tartar scenario) - I went on the  argo site and they list one serving 1/8 teaspoon or 0.6g as 0 carbs, but cream of tartar is 1.8c/tspn.  Also their 3rd ingredient is cornstarch.  It just doesn't add up.  Your labelling really not helpful in that they can make things low when in reality - NOT.  You need 2 tablespoons for the recipe, say 40g which is 16 c at a minimum.  It is 20c/40g for baking powder - so minimal savings by using bicarb/cream of tartar mix.

Attempt number 2 was marginally better, it did rise a little, but deflated at the end.  I will bow defeated.

So is this recipe 8net carbs or 20 something? I'm confused. I'd like to give this bread a spin...do you think I could make a grilled cheese sandwhich out of it? Since I don't eat meat that's the only sandwhich I eat...mostly, except for a veggie one from time to time.

Hi Morgan, it is a dense bread...not a light bread but you should have gotten more rise. Yeast is a funny thing, results change due to different elevations, temperatures, brands etc... I'll have to look into the Argo BP a little further, the label on the can says 0 carbs...but as I always preach you can't always believe labels. This one may have slipped by on me  :-\

Hi doug, I wonder if it's got to do with the fact that I am at the bottom of the world so to speak.  I had to add more warm water to help the consistency which is why I think it rose a bit more.

TT - I buy an Empower brand bread mix (golden wholemeal) which is a little pricey $11 which makes 2 loaves or pizza bases.  2.5 carbs/slice, 15 slices to a loaf, which I freeze.   I don't know if it is available to you in the States though.
Have you tried making a one minute muffin into a sandwich.  You just pour the mix into a square container and do the one minute and voila - bread, just slice in half and you have your sandwich fts style.

Hi Morgan, that's not available to me here, I live in a town of 30,000 it's very small. I have tried the one minute muffin but not since I eat eggs, I had to omit the egg before because I was vegan...but I found it to be VERY salty :\ I'll try it again. But I need something strong enough to hold up in a George Foreman grill to make a grilled cheese, I don't do well with the pan fried ones LOL

Morgan you have just about made my heart stop... :o  Haha  All this time I have been making things with baking powder and counted it as a 0.   Never thought to check this for those hidden carbs.  :-\   Thank goodness I don't use too many baked goods on a regular basis!  After doing some research I see that the carbs are more than likely coming from the cream of tartar and of course the cornstarch that they add in to protect against moisture and to keep it from caking up before you can use it.  As you mentioned you can make your own at home to save some of the carbs but it's not by much.  The recipe that I found will make just over 1/3 cup or 6 Tbsp :

Homemade Baking Powder

1/4 cup Cream of Tartar
2 Tbsp Baking soda

Put through a fine sifter and store in an airtight container.  Be sure to sift again before using after storing.  An interesting note...did you know that cream of tartar is a byproduct of the winemaking process as the powder forms inside wine barrels during fermentation?

According to the National Nutrient Database here http://ndb.nal.usda.gov/ (http://ndb.nal.usda.gov/) cream of tartar is 1.84 carbs per tsp, at 12 tsp per 1/4 cup, that makes this whole recipe 22.08 net carbs.  So if you needed to use 2 Tbsp in a recipe it would be 1/3 of your mix from above adding 7.36 net carbs to this bread recipe.  MAN!!! I am so crushed!!   :'(  Obviously the store bought baking powder with the cornstarch mixed in would be higher but still......  I will definitely be investigating the art of using vinegar with the baking soda as a  leavening agent in my baked goods  :-\   http://www.ehow.com/how_8678161_use-vinegar-leavening.html (http://www.ehow.com/how_8678161_use-vinegar-leavening.html)   This goes to show how even someone that has been doing FTS for a while can have carbs slip through the cracks....sneaky little buggers   >:(   I'm off to cry myself to sleep now   :'( :'(

It's ok Morgan  Haha  After living the FTS lifestyle for over 2 years you would think I would be used to that  HA!!  It obviously hasn't hurt me too bad, but if you are eating a lot of baked goodies and your weight loss (http://www.fattoskinny.com/) has slowed, it would explain a lot.  It's just one of those moments when you slap your forehead and say...why didn't I see that??   ;D ;D   Very good catch my dear  ;)
