Mississippi Mud Cake

Umpa, could you FTS this recipe for me?

Mississippi Mud Cake

    2 cups sugar
1/2 Teaspoon salt
2 cups all- purpose flour
1 stick unsalted butter
1/2 cup veggie  oil
1/2 cup cocoa
1/4 cup water
2 eggs
1teaspoon baking soda
1/2 cup buttermilk
2 teaspoons vanilla extract
1 bag mini marshmallows
 
 Icing
 1 stick unsalted butter softened
3 tablespoons cocoa
6 tablespoons milk
1 lb. confectioners sugar
1cup chopped walnuts or pecans
1 teaspoon vanilla extract


 my stomach now turns sickly when I read what I used to eat when I was little!
thanks, I wanted to try this again but don't really want to eat all those carbs and sugar!

Nope Shercat, you can get it free with 50 posts! But if you are craving Mississippi mud I will also post my magic bar recipe which is so decadent you will think you are eating out of the sugar trough! ;) Get busy!  I will post a chocolate cake recipe for you too ;)

Ingredients  6 tablespoons butter or margarine, melted
 FTS No-Graham Cracker Pie Crust
  7oz condensed milk (recipe below)
 1cup chocolate chips (recipe below)
 ¾ cups unsweetened coconut 
 ½ cup chopped nuts, any kind
Makes 16 bars
Directions
1. Prepare chocolate chips from recipe below and place in freezer.
2. Prepare Condensed milk from recipe below.
3. Preheat oven to 350 degrees.

FTS No-Graham Cracker Crust Ingredients
 2 tablespoons unsalted butter, melted

 ¾ cup Now unblanched almond flour
 ½ cup ground pecans 
 ¼ teaspoon cinnamon 
½ teaspoon pure vanilla extract 
2 tablespoons Xylitol or Zero 
1/8th teaspoon sea salt 
 1 tablespoon egg white, beaten
Directions
1. Preheat oven to 350 degrees.
2. Mix all ingredients thoroughly.
3. Grease a pie pan.
4. Put dough in pan and press into pan evenly including up all sides (omit sides for magic bars)
5. For recipes needing a pie crust which
4. Coat a 9x9-inch baking pan or pie pan with non-stick cooking spray.
22 net carbs for entire recipe

5. Prepare FTS No-Graham Cracker Pie crust per below recipe into bottom of prepared pan omitting the crust going up the sides of the pan.
6. Bake in a 350 degree oven for 6 minutes.
7. Pour condensed milk from recipe below evenly over crumb mixture.
8. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.
9. Bake 25 minutes or until lightly browned.
will not require additional baking time, bake in preheated oven 12-15 minutes until firm.
6. For recipes requiring additional baking time, bake in preheated oven 6 minutes till set.
Fill with recipe filling and follow recipe instructions.
10. Cool completely then cut into bars.
11. Store covered at room temperature.
TIP- The carb count includes the carbs from the condensed milk recipe, no graham cracker pie crust recipe and the chocolate chip recipe as well as the other ingredients.

Condensed Milk Ingredients 
 7 oz heavy whipping cream 
12 drops Zero or ¼ cup Xylitol 
 ¼ teaspoon xanthan gum
Directions
1. Mix all ingredients in a small saucepan with a wire whisk.
2. Bring to a boil over medium heat then reduce heat to simmer.
3. Simmer 5 minutes uncovered.
4. Turn off heat
5. Let cool completely
TIP- Do not make more condensed milk than you need for recipe, it does not store well.
0 net carbs for entire recipe

Chocolate Chips Ingredients 
 2 squares unsweetened bakers chocolate 
12 drops Zero¼ cup Xylitol 
 ¼ cup heavy whipping cream
Directions
1. Melt chocolate in microwave safe dish.
2. Take out of microwave and add Xylitol and heavy whipping cream mix well.
3. Pour into 9x9 pan, plate or pie pan and put in the freezer. Freeze for 3 hours.
4. For quick freeze use tip below.
5. Once frozen break into pieces and use for recipes.
4 net carbs for entire recipe

TIP- A pastry bag may be used to make chips also. Using this method freezes chips faster. Let chocolate come to room temperature and put in pastry bag and squeeze thin chips out onto parchment or wax paper. Freeze and use as needed.
