Broccoli 'Rice' casserole

I love the traditional broccoli rice casserole, but of course that is a big no-no, so I low carbed it and I think this comes pretty durn close to the original.  Technically, this isn't a casserole because it isn't baked.  This tastes more like the traditional if you use American cheese.

Broccoli 'Rice' Casserole

1 can chicken broth
2 tablespoons butter
1/2 cup heavy cream
4 oz. cream cheese, sliced
6 slices Deluxe American cheese (or 6 oz. cheese of choice)
1 bag frozen chopped broccoli (approx. 12 oz.) steamed, drained
1 bag frozen cauliflower (approx. 12 oz.) steamed, drained

Chop the cauliflower in a food processor until it resembles rice.  Set aside.

In a skillet, bring the broth to a boil.  Add butter, cream cheese and cheese.  Cook and stir until cheeses are melted and sauce is thick.  Stir in the broccoli and cauliflower.

Cans keep getting smaller here in the U.S.  Use to be 16 oz. is now 14.5 oz.
