Morgan, it sounds to me like she doesn't want you to succeed because she'll look bad and feel guilty for eating things she knows she shouldn't. She might also subconsciously feel superior that she's only 'slightly' overweight. 

I had a fat friend who tried to sabotage me all the time when she fixed meals for our game group. I had to get tough or stay fat - I started bringing my own food. Then she decided to try to lose weight and acted like we'd been keeping her fat! This was even before I was on FTS. She just didn't want me to get skinny while she stayed fat. She's moved away so it's not an issue any more. She was full of excuses, too, when I told her about FTS, and wasn't really serious about losing weight, because she's back to her old ways, high carbs.

I've been getting rave calls today about last night's dinner. I gave them the last of the coconut cake for dessert. I was full, so I skipped it. Pat, pat, pat, pat, pat. Oh, my arm hurts from patting myself on the back! It was fun (dinner was fun, not patting myself on the back).

I found this recipe online (pinterest):

Cream Cheese Pancakes
2 oz cream cheese - 2 carbs
2 eggs - 1.5 carbs
1 packet stevia sweetener
1/2 teaspoon cinnamon (optional)

Put all ingredients in a blender or magic bullet.  Blend until smooth.  Let rest for 2 minutes so the bubbles can settle.  Pour 1/4 of the batter into a hot pan greased with butter or pam spray.  Cook for 2 minutes until golden, flip and cook 1 minute on the other side.  Repeat with the rest of the batter.  Serve with sugar free syrup (or any syrup of your choice) and fresh berries.  A surprisingly satisfying substitute for the real thing.  Tastes like skinny fried cheesecakes!  Even if you aren't watching your carbs these are a delicious departure from the traditional doughy stack of pancakes.  And you won't have the sleepy feeling that usually comes afterwards!
Could be different carb count depending on products used (Neufchâtel). Read your labels for a more accurate count.

Morgan, I'm like you - but I've had better luck when I drink 100 oz of water every day. I have a 25 oz. glass that makes it easier to get that much water. I've been busy this past week and haven't gotten all 100 oz. and the scales haven't budged. I have a busy day on the road today and hate to drink a ton of water before I take off. I hate to drink that much water late in the day because I'm up all night.  What to do, what to do.

It's the baking powder that makes it rise. And, yes, the egg holds it together. If you decrease the amount of egg, be sure you mix it very well or you'll have a cup of mush.

I just think it's funny that the same website gives different numbers for the same item, looks like izzet was logged in and I wasn't. also the one I looked at said 1 gram fiber which nets out to 0 grams carbs. It's no wonder we get confused about what we're eating!

I haven't lost an ounce so far on the low-carb-a-thon. I'm going to increase my water and see if that helps.

Avocado Fries
 
Ingredients:
 Oil For Frying
 2 Avocados
 2 Eggs, beaten
 1 and 1/3 Cup Porkskin Crumbs
 1 Teaspoon Lemon Pepper
 1/2 Teaspoon Salt
 1/4 Teaspoon Cumin
 
Cilantro Lemon Dipping Sauce
 5 Tablespoons Mayonnaise
 3 Tablespoons Fresh Cilantro, chopped
 Juice from 1/2 of Lemon
 
In a medium-sized bowl, mix together the bread crumbs, lemon pepper, salt and cumin. Set it aside. Cut the avocados in half and then slice them vertically into 4 inch by 1 inch wedges. Set them aside. Heat the vegetable oil to 335 degrees Fahrenheit in a large frying pan, adding enough oil so that the oil is about 3 to four inches deep. Dredge the avocado slices in the breadcrumb mixture, then in the egg mixture, then in the breadcrumb mixture again. Place them in the hot oil and fry them for about 2-3 minutes, or until golden brown. Remove them with a slotted spoon or tongs, and set them on a plate lined with paper towels to absorb the excess oil. Allow them to dry for 10 minutes, then transfer them to a serving tray and serve them immediately with the Cilantro Lemon Dipping Sauce.
 
For the Cilantro Lemon Dipping Sauce, place the mayonnaise, cilantro, and lemon juice in a blender and mix until smooth and creamy in texture.

I've been craving chocolate oat cookies for a long time. They got kind of hard by today so I'm thinking about putting 1/2 cup chopped pecans in next time instead of the fake oats. I'll let you know how that works.

I made your bacon wrapped cod recipe tonight for company and they raved. I used three kinds of dip - plain Ranch, chili and garlic Ranch, and cayenne Ranch. I think I was the only one who ate the cayenne. Yay! I have some leftover for whatever I cook tomorrow!
