Mexican sausage casserole

I don't know the carb count on this, but I know it's fairly low based on the ingredients.

browned ground pork sausage (like hamburger meat) - 1 pound
pico de gallo (I used a fresh pre-chopped package from my produce department), about 3/4  cup
chopped celery and onion mix (bought premade from produce) about 1/2 cup
1 can of black soy beans
cayenne pepper to taste (mix it with the veggies as you saute them), sea salt, black pepper
about 3/4 cup shredded jicama
1 cup shredded cheese (I used cheddar and italian cheeses...use what you like)

Brown the meat. Saute the veggies all together with cayenne pepper, salt, pepper (whatever other seasonings you'd like). Put the sausage into the bottom of an 8 x 8 glass baking dish. Pour the veggies on the top of the sausage. Top with cheese and bake for about 25 minutes (until cheese is melted to your liking) in a 350 degree oven.

Makes about 6 servings and my husband couldn't get enough of it!!! I've brought leftovers for lunch today and can't wait to eat it.
You can change up the veggies that go on the top.

I just bought pork sausage in the meat department and don't even know what the difference is in chorizo and that. I'm guessing that I did not.

Chorizo is a mexican sausage used in southwest cooking.Has alot of flavor!Have to strain the grease though.I like it for breakfast tacos. :)

I went to my local health food store and asked them to order them for me as I was unable to find them either.  Weather is starting to get cooler and I am looking forward to eating chilli!!

I found canned soy beans (a tan color) at Ingles. I'm thinking I could make my white chicken chilli with them. I'll have to double check the carb count on the can first.

I made chili last week for doug with black soy beans it was excellant!We had chili dogs the next day with the leftovers! ;)

My chili is simple
1/2 pound ground beef
can black soy beans
1/2 cup low carb spaghetti sauce
1/4 cup onion
1/4 cup jicama(precooked)
chili powder to taste(start with two tablespoons)
salt and pepper to taste
I wanted to serve Katary's crackers  with this but I didn't have time to make them.So i just served it with shredded cheddar,then we had chili dogs the next day.
