Kim's I HATE To Waste Food Soup Recipe
NOTE:  Have leftover salad or veggies in the fridge that are starting to go bad? 

Put any low carb raw veggies you want to use up in the blender with enough water to blend it up.  It might look funky.  Pour into a soup pot and add 1 - 2 cups of chicken or beef broth depending on how many veggies you had.  You can also throw in any leftover low carb cooked veggies and cut up meat if you want to.  Add any dried spiced/herbs you like.  I usually put in garlic, parsley, chives, salt & pepper.  Cook until the raw veggies are tender.  I usually bring to a boil and simmer 45 mins.  You can eat it like this or you can add heavy cream to make it a creamy soup.  Also really good topped with some parmesan cheese.

This might be difficult if you are keeping your carbs below 20 and are not good at eyeballing to know how many carbs you have going on in the recipe so be careful with that    MEASURE before blending if you need to...........

Kim's Low Carb Pizza

NOTE:  This is the best low carb pizza ever ~ tastes just like a thin crust pizza you could buy anywhere!!  I keep all the ingredients in the freezer so that I can have pizza anytime I want it.  Make sure your pizza sauce doesn't have sugar in it.  Make your own batch and freeze it in snack size baggies.   Put the baggies into a freezer bag.  An entire pizza has 14 carbs so watch your serving size 

1 Joseph's Flax, Oat Bran & Whole Wheat Lavash Bread
1 1/3 cups mozzarella cheese
2 tablespoons pizza sauce
20 slices of pepperoni
Olive Oil Spray

Spray a baking sheet with the oil.  Put the bread on the sheet & then spray with a little oil.  Smear 2 tablespoons of sugar free pizza sauce on the bread.  Top with the cheese and then the pepperoni.  Bake at 375 for approximately 20 - 30 mins.  The whole pizza is 14 net carbs and 1/2 of the pizza is 7 net carbs.

Kim's Almost Zero Carb Blue Cheese Dressing

Notes:  Noone can ever tell that this is low carb!!  You must use So Delicious Dairy Free Coconut Milk Beverage to keep these carbs so low.  Get the carton that says 50 calories & unsweetened.  You can adjust the thickness/thinness of this by using more or less coconut milk which has only 1 carb in a cup.  This is also good to make thick and use as a dip for wings!

1 cup Coconut Milk Beverage So Delicious
1 cup mayonnaise
salt and pepper
dried parsley
dried chives
garlic powder
onion powder
1 teaspoon lemon juice
1/4 cup blue cheese, crumbled

Simply blend all of this together.  I use a small food processor.  Makes just over 2 cups and if you use 2 tablespoons your carb count will be zero.  I LOVE this dressing!!!!!!  Sorry but I do not measure all of the spices but you can't mess this up.  Just throw the spices in and it'll be GREAT!  Mastercook tells me that the entire recipe is 1 carb

Good Morning!

Just wanted to share to perhaps help someone who is on the fence about this way of eating and also to motivate myself to keep going  :)  My weight loss has not been huge yet like some folks.  I did want to give you a bit of background.  I used to weigh as much as 250 pounds.  I lost down to 130 and then gained 60 pounds with my first child and 40 pounds with my 2nd child (they are both grown now).  I lost the baby weight but never below 145 pounds AND had to work really, really hard to try and keep my weight down.  I LOVE TO EAT!!!!!!!!!!  I LOVE TO COOK!!!!!!!!!  So ~ to make a possibly long story short............Over the past 10 years my weight has hovered around 160. 

I began following Doug's healthy eating principals maybe 1/2 the time and my weight is down but MORE IMPORTANTLY my huge belly is so much smaller.  It feels like I have lost more than the 5 pounds.  Plus I just feel so much better in general.  I am working towards having less cheat days/meals.  When I put on jeans, etc it feels more like 10 pounds.  I could probably reach my goal much faster by keeping my carbs down below 20 but I guess I am taking baby steps towards that end.   :)

Anyways ~ Thank you Doug for writing the book.  Thank you for the forums.  Though I don't post alot I get on here pretty much every day.

Ask Umpa / Pizzelle Cookies

Hi Umpa ~
Are ya'll enjoying any snow where you are?  We got a bit last night & I love it!!  It'll be gone by tonight though which works just fine for me  :)

I want to make low carb Pizzelle's.  I think they are sooo pretty.  I have the maker.  The only recipes I can find use a granual sweetener and a protein powder.  I was wondering if you have any ideas for making them not using the protein powder (I have no idea what I would use instead) and perhaps just liquid stevia instead of a granulated sweetener. 

Once I hear back from you I'll start playing with it.

RANCH SALAD DRESSING

1 cup mayonnaise
1 cup coconut milk (make sure you get the 50 cal no sugar kind which only has 1 carb in 8 oz)
Seasonings:  dried parsley, salt, papper, garlic powder, onion powder,
A squirt of lemon juice

Just blend all of it together ~ I use a food processor.  I do not know the exact carb count (perhaps Umpa might know), however, it is going to be VERY LOW in carbs.  My family loves it  :)

Good Morning!!

Thought I would share this candy recipe because I LOVE IT and all of my non-low carb friends love it too......

12 bars of Chocoperfection bars
1 T Coconut Oil
4 oz chopped mixed nuts
12 drops liquid Stevia (use however many drops you want for how sweet you like it)

Melt the chocolate bars in the top of a double boiler.  Add everything else & stir together.  Use a 24 count mini muffin pan which I line with mini liners.  Fill and cool.  I keep the finished candy in the fridge and have 1-2 in the evenings with a cup of hot tea.  Each candy has approximately 1.5 grams of net carbs.  I hope ya'll like it  :)

So ~ I made lasagna last night using cabbage leaves in place of the noodles and my husband couldn't even tell the difference ~ SCORE!!!!  Hubbie is eating lower carb with me since I do ALL the cooking and shopping  ;D
