Hobbies are very helpful!  I love to knit & crochet.  Perhaps start an online cookbook where you in put all of your wonderful new low carb recipes.  I like Mastercook.  Walking.....

I would leave out the flour; broth and soup and use only a little bit of sour cream.  Add heavy cream; garlic powder and onion powder and a splash of Worcestershire Sauce; cook it down a bit and eat it over cauliflower mash.  Oh My!  Going to make it this week  :) :-*

Not sure Umpa - I stopped to get some today but they were out.  I think its their brand and called peanut caramel clusters.  Its in a bag and hanging in tje candy section.  I can get 2 snacks from I bag.  However in a very needy chocolate moment one time I ate 2 entire bags - ha ha.  Good news?  Never gives me tummy troubles and I have a sensitive tummy when it comes to the fake sweeteners.

I don't eat pork finds either!  Tony that sounds yummy!  You could also cook it all stovetop as a one pot meal.  I do agree that cabbage "noodles" would be awesome!  :)

Don't be too hard on yourself!  I wouldn't give a second thought to Sunday.  Its not like you you went on a three week binge - just one day!  YES!!  I do think the weight will drop extremely quickly - probably just inflammation and water retention.  Keep going! You are doing GREAT!  Hugs - Kim

Per above - the OMM would be an excellent addition.  I add sunflower seeds to mine and cook it so that it is square shaped.  Cut it in 1/2 and then toast it in the toaster.  Very yummy with butter.

CELERY ~ Eat it raw ~ I like it with peanut butter or in salads.  You can also eat it with any dip or stuffed with a multitude of different fillings.

CREAMED SPINACH ~ There are tons of online recipes but this is how I like it:

 1/4 cup butter
 2 tablespoons onion, minced
20 ounces frozen chopped spinach, thawed  & liquid drained off (squeeze if needed)
1/2 teaspoon salt, or to taste
 1/8 teaspoon pepper
 1/4 teaspoon nutmeg
 Dash cayenne
1/4 - 1/2 cup parmesean cheese
 1/2 cup heavy cream
Saute the onion in the butter, add the spinach and cook til done.  Add everything else & simmer a bit til it thickens up.  YUMMY!
