homemade potato chips anyone?

Ok, so it really is potato chips...technically, it's called a jicama potato!

Oh my GOSH! YUMMY and you can season them however you like...sweet (I put cinnamon on a few), salty, garlic, cayenne pepper....

Slice your jicama very thin and fry it in peanut oil. It takes about 4 to 5 minutes to get it to brown. On my second batch, I put a ltitle bit of soy flour on them (dusted them on one side) and they browned differently. I think I liked the non-soy flour chips better.

Jicama is very very low in starch, not like our 'traditional' potatoes..... I fried some for the kids and I a couple nights ago~
came out awesome and dipped with reduced sugar ketchup ...the kiddos loved it!

I also read that jicama is like celery in that it takes more calories to digest than there are IN the jicama....a negative calorie food! : )

If you dont want your jicama  crunchy boil it in water for about an hour like a regular potato that pretty much gets rid of the crunch.

Beebs is right about boiling the HECK out of the jicama for softer potatoes. I didn't boil them before using them as chips. I just sliced them paper thin...crunchy is good for potato chips.

I have made fries with jicama baked in my nuwave convection oven. Im going to try to boil some first, sounds good.

Phil try the jicama potatoe salad I posted,it is wonderful! Just follow my instructions on the saute/boil so it doesnt get watery.Let me know if you like it
