Pork Rind Cookies

Just found this, haven't tried them but I wanted to share before I leave for work:
Cocoa-Peanut Porkies

8 ounces carbsmart chocolate chips (or any sugar-free semisweet chocolate)
3/4 cup natural peanut butter
5 ounce bag pork rinds

Put the chocolate and the peanut butter in a microwaveable bowl, and nuke on high for 1 minute. In the meanwhile...

Poke a hole in your bag of pork rinds to let the air out, then smash 'em up with abandon -- I just bash mine all over with my fist. You want them in smallish chunks.

The microwave beeped! Stir the chocolate and peanut butter, and if there are still some unmelted bits of chocolate, give the whole thing 1 more minute on high.

Okay, back to your pork rinds: Dump 'em in a huge mixing bowl. Take a second to spray a 9x13 pan with non-stick cooking spray.

The microwave has beeped again! Stir the peanut butter and chocolate together well, then scrape the mixture into the bowl with the pork rinds. Stir the whole thing up until the pork rind bits are evenly coated with the chocolate-peanut mixture.

Dump the whole thing into the pan, and press it out into an even layer. Chill till set, then cut in bars. Store in the fridge.

If you get 24 bars, each will have: 129 Calories; 9g Fat ; 6g Protein; 7g Carbohydrate; 5g Dietary Fiber; 2 g usable carb.

and if you use beanit butter you will cut out more carbs!

hey dont laff....the beanit butter cookies i made dont taste too much different than the ones i made from pork rinds ;D get down with your bad self paula :o

I don't eat pork rinds plain, but I like to use them in combination with casseroles.  I think I might even eat these.  Going to make them tomorrow.   :o

These were really tasty!  You would never know they are made with pork rinds.  Nice, light crispy texture.  When I mixed the (I used Beanit Butter) and chocolate together and it was all melted I couldn't help thinking it would make a nice spread for gg crackers for a quick cure for chocolate craving. That got me to thinking maybe we should have a thread just for sharing toppings for gg crackers. :)

WOW! I made these today and they are so yummy. Stress relief was an added bonus. Smashing up all of those pork skins was good therapy.  :D It is very true you can hardly taste the pork skins in them.

I made them last night and they are really good.

I am going to experiment with this. I was thinking of making these only instead of chocolate, using a vanilla/peanut butter flavoring. Kind of like a pork rind pie or tart crust where you could top it with greek yogurt, sugar-free cheesecake, or something like that.

The crunch in these bars really hit the spot and you really couldn't tell it was rinds. If I served it to someone who didn't know they would probably think I made them with crushed Chex cereal or something.

If I come up with anything good I'll let you all know.
