Title: Low Carb Maple Pecan Pie
Post by: zuiderdamm on June 25, 2010, 09:02:49 PM
Crust:
1 1/2 cups unsweetened flaked coconut (or almond meal, depending on your taste) (12carbs-coconut or 18carbs-almond meal)
3 tablespoons butter
1/4 cup xylitol (optional)
Filling:
3 eggs (around 3 carbs)
1/4 cup xylitol
1 teaspoon vanilla extract
2 tablespoons melted butter
1 cup sugar free maple syrup (the thicker the better) (the brand I used was 4carbs)
1 1/2 cups pecans (around 4.5carbs)

Crust:
1. Adjust oven rack to middle position and preheat oven to 350 degrees F (165 degrees C)
1. Mix coconut and 3 tablespoons of butter or margarine together. Grease pie pan (I used baking Pam). Press mixture into an 8 or 9 inch pie pan.
2. Bake for 10-15 minutes, or until golden.

Filling:
Beat the eggs with the sweetener.
Add the vanilla, butter and syrup, then add the pecans.
Pour into the crust and bake at 350°F for about 35-45 minutes.
Let cool and slice into 8 pieces.

If sliced into 8 pieces, each slice will be about 3 carbs each.

You could also use almond meal instead of coconut, but I don't care for the soggy texture.

Oh I forgot to add that you can add Xylitol to the crust to make it sweet. Oops! I'm editing the recipe now. Sorry!

Dad and i agree that you don't need to add xylitol to the crust! The toasted coconut flavor really comes out. :)

I need a bigger freezer (LOL)

Can anybody answer this question
Where is the Pecan Capital of the world ?

Answer to follow later.

BTW young lady this is a outstanding recipe, it will be
very hard for me to cut a pie like this in 8 pieces however.
One great thing for me is it freezes perfectly.

Buford, I often cut the recipes in half or less (whatever makes the eggs come out even if there are eggs in it) - for this pie, you could cut the recipe into thirds pretty easily and use muffin tins or little loaf pans to make individual pies.

1/4 cup = 4 tablespoons
1 tablespoon = 3 teaspoons

I've made this a number of times in a cupcake pan and they came out great.
Would leave two out for the misses and I and freeze the rest.

Making it this way helps prevent eating too much at one time! ;)

Hi Buford    I would have guessed that it is where I am at (South Carolina...we love our peacan pies here  ;) ) because there are so many pecan trees around...LOL   but I believe it is San Saba, Texas that gets that honor.

This is a really good recipe!!

Sarah that is a great idea of making them individual.   :D

Did I learn something over the last few days, beside being a
Fishin' Fool I am also a self taught Geek,
(I read a lot and like to build things like radios and puters)

So after a lot of research it seems that there are two(2) places
that claim the title of Pecan Capital

San Saba, Texas
Albany, Georgia

Georgia is number 1 in pecan tonnage, Texas is number 2

Thanks for y'alls input and keep making them Pecan Pies

Buford and the Girls
(MissyBelle loves the filling, spits out the pecan pieces,
Princess nope she'll eat the pie crust in a heart beat though)

Be careful if you are using xylitol to sweeten Buford.  It is toxic to dogs if they get enough.   ;)

Thanks for the headsup, never gonna be a problem here only use
liquid sweeteners. Read about that stuff longtime ago and just never
ordered any for here.

Really appreciate your kindness for thinking about the girls safety.

This recipe looks delish  :) but my tummy does not like Xylitol ~ Anyone know how I could make this using just liquid Stevia?  Perhaps it's not possible since it might need the bulk.   I made a cheesecake that was GREAT but I didn't like the way the Xylitol made me feel  :'(
