Hi all,

Giving up meat for Lent.  I still will eat eggs and seafood though.  I need some recipe ideas.  Couldn't find a post like this already, so sorry if it has been started already.  Thanks :)

I have been hearing a lot about this machine and "green smoothies/drinks".  I would like some input or reviews or recipes. It seems that many low carb, healthy drinks can be made. I would appreciate any input!

Cream of Cauliflower Soup

Hey Umpa what type of flour and milk replacement would work best? Yummy fall soup time! ;)


Serving Size: 6
INGREDIENTS
1 head cauliflower, cut in bite size pieces and steamed until tender 4 Tbs butter 1/2 onion or small onion, diced 1/4 cup flour 3 cups chicken broth 2 cups milk, warmed 1 tsp. Worcestershire sauce 1 cup shredded cheddar cheese
INSTRUCTIONS
Melt the butter in a large pot.
Cook the onion in the butter until tender.
Whisk in the flour and cook for a few minutes.
Whisk in the chicken broth until smooth.
Stir in the milk and Worcestershire sauce.
Add the steamed cauliflower and cheese.
Heat through without boiling.
Season with salt and pepper to taste.

Watching a show about high carb and low carb days--every other day cycles.  On the high carb days you are encouraged to eat non starchy carbs and lots of veggies and good fats.  What do you all think? ???

Made some of Katary's crackers, put some Beanit butter and Doug's homemade strawberry jelly on them-YUMM it sure hit the spot!   ;D

Watching Dr. Oz. And they are talking about super charging weightless, mood etc.  The expert's  tip is to use heavy cream instead of skim milk in your coffee to lose weight because it does not spike your blood sugar....Doug and Umpa should be guests on Dr. Oz!!  Could you imagine what they could teach him?! :o

Made regular lasagna for my family and made my lc version using low salt deli turkey for noodle layer. It was really good!  I got the idea from another low carb site.  Used  Rao's sauce...yummy and low carb. :D

I’ve seen the other recipes out there on the Web, but
once I tasted this soup in the restaurant, I knew what
was in it and knew those recipes were wrong! This is so
much simpler and, I guarantee, closer to the original taste.

Serves: 8
Prep. Time: 0:20 or more

1/4 cup butter OR margarine
1/4 cup all-purpose flour
3 cups chicken broth
1 cup milk
8 oz. Velveeta process cheese food - cubed
10 oz. can Ro*Tel® tomatoes and chilies
2 cups cooked, shredded chicken
1 tsp. cumin
1 tsp. chili powder
salt and pepper – to taste
flour tortillas – as needed, about 4 - 6
shredded Colby Jack cheese OR Mexican blend cheese

Umpa  what type of flour would work here?  Soy?  I would use regular cheddar too....no tortillas either

I made Katary's "nogurt" yesterday.  This morning I had that with 1/4 smaps and two strawberries cut up--yummmy it is just like the yogurt parfaits with granola and fruit!  I will have this often.

Just made Dixie Diner's key lime dessert.  I am very pleased with it!  It was easy to make and is very good. Quite a nice size portion for 3 carbs too.  I will purchase this again.  I even had 1/2 piece for breakfast. :D

Google "yummy bok Choy salad" it was super yummy.  I did use stevia instead of sugar, 1/2 of the oil, left out the ramen noodles, and added black toasted sesame seeds.  Great way to get some really low carb greens in.  It was even good the next day.

Hi all found this recipe when I was having some girlfriends over for drinks and apps.  I made kabobs after marinating.  VERY tender and yummy.  Fat count is high but I used less EVOO so it was lower.  Made sure I used the lowest carb ranch that I had.
