Oven Baked Fajita

I am wanting to make this recipe for Superbowl Sunday. Please let me know what you think.

Oven Baked Fajita

1 lb boneless skinless chicken breast cut into strips
2 Tbls vegetable oil
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp salt
1 (15oz) can diced tomatoes with green chilies (rotel)
1 medium onion, sliced
1/2 red bell pepper cut into strips
1/2 green bell pepper cut into strips

Directions

Preheat oven to 400 degrees, place chicken strips in a greased 9 x 13 baking dish
Combine all seasonings and sprinkle over chicken and stir to coat
next add tomatoes, onion and peppers and stir to combine
bake uncovered for 20 - 25 minutes or until chicken is cooked through and the vegetables are done.

My preference would be to skip the tortilla, sprinkle with cheese and a spoonful of guacomole on top.  Oh yummy....

Looks YUMMY!  I agree with Morgan.  I'd skip the tortillas and sprinkle with sharp cheddar & some guacamole or avocado chunks.  ORRRRRRR toss on top of a salad with ranch dressing  :)

That sounds very similar to a meal I throw together on the stove & sometimes add cheese & guacamole after it's cooked.

Hi Pam, pick up a couple heads of Romaine Lettuce, they are my fav wraps!
