LOW CARB Chili Con Carne
1 pound ground beef
2 slices thick bacon chopped fine
1 tablespoon cumin
1 small onion chopped
1 teaspoon olive oil
1 tablespoon chili powder
2 cans black soy beans (7 net carbs)
1 teaspoon salt (more to taste)
1 teaspoon cayenne pepper (optional heat)
shredded white or yellow Cheddar cheese
Directions
1. Place the drained and rinsed soy beans into a saucepan with 2 cups of lightly salted water and bring to a boil.
2. Once boiling reduce the heat to medium/low and cover.
3. Heat the oil up in a medium sized non stick pot over medium heat and fry the bacon till almost crispy.
4. Add the ground beef and cook through.
5. Add the balance of the ingredients to the beans and mix well.
6. Pour the beans and the liquid into the pot with the ground beef and bacon.
7. Bring to a boil then reduce to simmer.
8. Cook uncovered until the chili is thickened to your liking.
9. Adjust the salt and the heat by adding additional salt and spice if desired.
10. Mix well and serve with a handful of shredded cheddar cheese on top.
