The only thing you need is you and the will to change. Do you have that?

Morgan we all do that! It's just part of the process. With getting healthy sometimes you have to make the tough decisions. Sure you can go back to donuts, but is that really the person you want to be? When I need a fix for something sweet I hit the Russell Stover Sugar Free candy. Yummy and it tastes like regular candy to me. Also, try the recipe for cheesecake. It's easy and yummy, we make it without the crust to save on carbs. My husband recently made a banana fosters version of it for me that was to DYE for! OMG so good and I of course covered it with SF no carb whipped cream. We have lots of alternatives in our recipe area, and we get to eat all those goodies and still lose weight. Hang in there, it does get easier.

You know Umpa...they do! I was looking for some the other day for my son. With SF candy I always look ahead of time for holidays. Candy crate has them, little pricy but they have them.

I found some sugar free valentines day candy at walmart the other day. They even have had the sweethearts that are sugar free for those of us "baking challenged" peeps. :)

Thanks Umpa. I'll try this on Monday and let you know how it went. I'm better with muffin pans anyway. :)

Can't wait. It's really tough when most of these recipes call for almond flour. Thanks for working it over Umpa. :)

Ask Umpa / Cheesy Skillet Bread-
« on: January 30, 2013, 04:15:21 PM »
Umpa I need your help. I have a great looking recipe that is already low carb and would work for most. Accept with my son's treenut allergies I can't use Almond flour or Almond milk that is called for in the recipe. So I wondered if you could look it over and try adjusting the ingredients so I can make it for my kiddo??

Cheesy Skillet Bread:

Ingredients

1 tbsp butter for the skillet
    2 cups almond flour
    1/2 cup flax seed meal
    2 tsp baking powder
    1/2 tsp salt
1 & 1/2 cups shredded Cheddar cheese, divided
    3 large eggs, lightly beaen
    1/2 cup butter, melted
    3/4 cup almond milk

Instructions

Preheat oven to 425F. Add 1 tbsp butter to a 10-inch oven-proof skillet and place in oven.
In a large bowl, whisk together almond flour, flax seed meal, baking powder, salt and 1 cup of the shredded cheddar cheese.
Stir in the eggs, melted butter and almond milk until thoroughly combined.
Remove hot skillet from oven (remember to put on your oven mitts), and swirl butter to coat sides.
Pour batter into pan and smooth the top. Sprinkle with remaining 1/2 cup cheddar.
Bake 16 minutes, or until browned around the edges and set through the middle. Cheese on top should be nicely browned.
Remove and let cool 15 minutes.

Notes

Serves 10. Each serving has 7.2 g of carbs and 4 g of fiber. Total NET CARBS = 3.2 g.

Sitz, my husband was the same way. He said it's really expensive to eat fresh and that I should just to portion control and count calories. He is now REALLY glad I didn't listen to him. He came around really quickly though and since has lost 50 pounds himself. Bring your wife here to forums, let her see how well everyone is doing, have her send us private messages if needed. She'll come around. :)

Even foods that you have eaten for a while you'll find that can happen with. I am a huge fan of the Davidson's preshelled sunflower seeds. I have been eating them off and on for months. The whole little bag has 3.5 carbs. They repackaged the bag and low and behold, the new label says it's now EIGHT carbs. Well they taste good but not 8 carbs worth good. So yes, always read those labels!

General Questions / Re: Why 20 grams of sugar daily?

Love your answer Mark. When I was really hardcore losing on FTS I would stay around 12 carbs per day. It was really easy to do and I was always full. :)
