Im completely frustrated at my inability to make in a the baked goods. Everything I make tastes like Bantha poodoo! The bakery book isnt as beebs friendly as I hoped....  :'(

Valastro, Buddy.  "Steak Pizzaiola"  18 January 2011.  -INGREDIENTS

4 12-ounce boneless ribeye steaks cut 1-1/2" thick
3 plump cloves garlic, minced and divided
3‑4 tablespoons olive oil
1 pound cremini mushrooms, wiped, trimmed and sliced thickly
Salt and fresh black pepper
1 medium red onion, peeled and sliced lengthwise
1 large sweet red bell pepper, seeded, pith removed, sliced 1/2" thick
1 large yellow sweet bell pepper, seeded, pith removed, sliced 1/2" thick
1/2 cup med-dry Italian white wine
1 28-ounce can plum tomatoes with juices, hand chunky-crushed, tough stem ends discarded
2 tablespoons chopped fresh oregano
1 tablespoon chopped Italian parsley
:

1.The night before: sprinkle the steaks with salt, rub with one clove minced garlic and a thin coating of olive oil. Wrap in plastic and refrigerate overnight. Bring meat to cool room temperature before proceeding.
2.In a large sauté pan over high heat: swirl in a couple tablespoons olive oil. When shimmering, add the mushrooms and pinch of salt. Stir to combine and let the mushrooms cook high to medium-high, allowing to sear, caramelize and exude juices – a few minutes. Add the onions and peppers and a small pinch of salt. Continue to cook at the same heat, turning and tossing to get a little caramelization on the onions and peppers. Turn the heat down and add another minced clove of garlic, stirring to combine. Continue to cook, allowing the vegetables to soften until the peppers are a tender-crisp consistency. Add the white wine, turn up the heat and reduce until juices are syrupy. Add the tomatoes and juices and cook, stirring at a simmer until sauce is rich and flavorful. Pull off the heat, add remaining minced clove of garlic, the oregano and parsley. Check for salt and grind in black pepper to taste.
3.Heat grill and cook ribeyes until your degree of doneness. Let rest a few minutes and plate, smothered in the pizzaiola sauce.

Ask Umpa / Umpa McMuffins

So I made the umpa mcmuffins in the new bakery book. Umpas looked golden brown and crispy and SO wonderful. Mine turned out like little poop piles and they dont taste much better. I followed the recipe exactly so Im not sure what happened but I need help!!!!  :'(

For those of you have fallen off the wagon and think I am the Rock of Beeble, let me tell you what I ate yesterday. I had a Frisch's Swiss Miss and fries for lunch and for dinner (yes I know), I had a Taco Bell  taco salad and a caramel apple empenada and smores pop tarts for a snack. Im getting ready to start my cycle and have felt like crud for several days I believe some of this has stemmed from a deep seated longing for umpadoodles and my xylitol hasnt arrived and I cant make a thing! So yes I cheated. Back on the wagon today!!!  :P

Thank you Doug and Umpa for saving my life! Since I started FTS in MArch  I have cut my insulin from over 150 units a day to less than 50!

Umpa can you convert this for me for Christmas baking? I still need white dinner rolls to of course lol. Anyhoo the spoon cookies
1 cup (2 sticks) of butter
2 cups all purpose flour
3/4 tsp baking powder
pinch fine salt
1 large egg yolk
3/4 cup sugar
1 tbsp vanilla extract
1/4 to 1/3 cup jam such as berry plum or cloudberry
Confectionars sugar for dusting.
Pre heat oven to 325 line 2 baking sheets with parchment paper or silicone baking mats. Melt the butter in a small heavy bottom sauce pan over medium heat. Continue to cook, swirling the pan occassionally until the butter browns lightly and smells a bit nutty, about 15 minutes. Transfer the butter to a medium bowl be sure to get all the tasty brown bits and cool slightly.
Meanwhile whisk the flour, baking powder, and salt in another medium bowl.
whisk the egg yolk, sugar and vanilla into the cooled browned butter.

Stir the dry ingredients into the butter mixtureto make a uniform but crumbly dough that looks like wet sand.
