Rena you could also julienne zucchini and cook it in a little olive oil and garlic, then put your alfredo over it. ;)

This is my recipe and it is too good not to share.

Enjoy!

Zucchini Bake                                                   Preheat oven to 350 degrees

2 zucchini squash, peeled and cubed (I like to use some crookneck squash (yellow) with it too)
2 eggs, beaten
1/4 cup unsweetened almond milk
1 teas. baking powder
1/4 teas. xantham gum
1/2 lb. cheese, cubed
1/4 cup onion, diced
1/4 cup green peppers, diced

Cook squash in a small amount of boiling water until almost tender (about 5 mins.), drain and let cool.  Combine eggs, almond milk, baking powder, xantham gum, cheese, onion, and peppers.  Stir in squash.  Bake in a greased 8x8 casserole dish for 35 minutes, let stand for 10 minutes before serving.

I made chocolate almond clusters today...sounds yummy doesn't it?  They are except...the chocolate is gritty from the xylitol :(  I melted the chocolate in a double broiler, then added the xylitol and stirred, and stirred then added heavy cream and stirred more.  Is this recipe just gritty or have I done something wrong?  I had intended to make some candies for Easter.

Any help would be appreciated ;)

I was just a the store looking at things for my vegetable garden when I came across Stevia Plants in the herb section.  I was wondering if anyone knows how you would use it?  ??? Umpa have you seen or used this?  I thought I would check before I got some.

Mouseissue,  I moved from So.Ca in the early 70's and went to the Pacific Northwest where I spent most of my life.  Finally, I got tired of the rain and gloom.  It is beautiful country though!

I too am originally from So Ca.  I live just south of SLC,  I moved here 7 1/2 years ago and I still haven't figured out why... except for the mountains are so beautiful.  I go to Great Falls Mo.  once in awhile to visit my sister in law.  Bear Lake is my summer stomping ground, we usually go there a couple of times for week long stays. I love it there.
 I hope you have a wonderful vacation.  Maybe, someday we can meet up with our skinny little bodies ;D

Liz don't get discouraged.  First, it sounds like there could be a problem with your scale, it shouldn't change each time you stand on it.  Second, consider where you might be in your cycle it could just be water weight.  Also, if you haven't measured yourself do so.  I have found I may not lose weight (actually put on 4 lbs over the weekend  :( ) but you are still losing inches!  Remember to drink plenty of water!  It really does help.  Just don't give up, it will work  ;)
