Sides and Snacks / Fried Okra

I was looking for a low carb fried okra recipe and found this! I cooked it last night with dinner and even my non-okra-eating family members liked it!!! It was absolutely delish!!!!   8)

Lean On My Shoulder / Feeling like a yo-yo

Hey all,

I'm not sure why, but my weight loss is bouncing around like a yo-yo. I only eat 12 - 16 carbs each day, I drink plenty of water, I even started walking on a regular basis last week with the kids' running club. I do eat a piece or 2 of the sf candy...either 0 or 1 carb (18-22sugar alcohols) daily...should probably cut those out...but my weight loss, each Friday when I officially weigh in, isn't going down! As a matter of fact I'm up a pound and a half from last week!!!

Any and all ideas, suggestions, and help would be wonderful! <sigh>

Dinner Recipes / Baked Tilapia or other white fish

Just tried this tonight and it was delish!! So I thought I'd share!! It's sooooo easy and yummy!!  ::)

Melt butter or margarine of your choice in a glass baking dish. Coat fish fillets in the butter by dredging through and turning the fish over. Sprinkle "Grill Mates Seasoning Garlic" flavoring and then top with  generous portions of freshly grated Parmesan and Romano cheese. Bake at 375 for about 15 min. or until fish flakes with a fork.

General Discussion / Help from someone in the Orlando area

Hey everyone! I'm heading to my mom's house in Orlando at the end of the month to help her after knee replacement surgery! My question is this, where can I find Torani sf flavoring syrup for my coffee AND Walden Farms products? Last time I was only there for the weekend, but this time I will be there for 2 weeks and won't have a lot of time to run around town looking for things! Publix didn't have anything that I was looking for last time, so if you live in the Orlando area and know where I can find these things, that would be awesome!! Otherwise, I'll have to order them online and pay the shipping to have them there when I get there!

As of last week I've lost 28lbs. since I started my weight loss journey!! Well, I also decided to try on some old clothes that were 2 sizes lower...haven't worn them in 10 years and they fit!!!  ::)  I'm sooooo excited!!! I went through my closet and took out ALL of the size 22 clothes and gave them to a friend of a friend!! I must have been at that size for a very long time because I had 3 trash bags full of clothes! I did save one pair of jeans to hold up for my after picture down the road...but I really wanted to share my success with my FTS family!!! I got dressed for church this morning wearing size 18 and my daughter (9 yo) asked me when I got new clothes!?! I told her that I bought them 10years ago...before she was born!!! hee, hee, hee

It feels sooooo good!!!   ;D ;D ;D ;D ;D

Dinner Recipes / MommaB's Chili

This is the fts friendly version of my chili! I have 6 in my family so I make a BIG crockpot of chili...you can half it or make it all and freeze the leftovers for a fast meal later! It makes roughly 12 servings with 46 net carbs in the entire recipe and my kids usually have seconds!!!  8)

Ingredients

2 lbs. ground beef (0 carbs)
2 T. garlic (minced) (6 carbs)
2 jars (14oz.) Pace Mild Picante' Sauce (28 carbs)
3 cans black soy beans (10.5 carbs)
1 tsp. dried basil
2 tsp. onion powder
1 tsp. chili powder (more if you like it spicy)
1 1/2 cups chicken broth (1.5 carbs)
1 cup water

Brown ground beef with the garlic (drain). Place in crock pot
add 2 jars of picante' sauce
drain and rinse the cans of black soy beans and add them to the crock pot
Add all the other ingredients and stir well.

Cook on low for 2 or more hours...serve with shredded cheddar cheese and sour cream!!

Hey everyone!!

I'm curious what vitamins you take each day and how much of each!?!

I've been taking a "cocktail" of vitamins for about 2 years now and want to know if what I'm taking is on the right track...AND what everyone else is taking!!   8)

Here's mine:  One a Day for Women; 2000mg. Vitamin C; 1000mg. Calcium; 2400mg. (2 capsules) fish oil; Super B complex; 1000mg. cinnamon

I take mine in the evening before I go to bed because the fish oil and cinnamon repeat!! lol   ;D

Girly Girl Talk / Help!!! I'm stuck!!!

Ok...so I know that I'm not supposed to weigh myself every day...but I do...it doesn't usually bother me as long as I don't gain...but the last 2 weeks my weight has gone up and down by half a pound...but no over-all weight loss! I'm fairly confident that I'm on a plateau...my question...what can I do to get off this lovely plateau!?! I don't eat any sugar alcohols...so that's not it...not sure what to do...I guess I could exercise...but quite frankly I don't like to exercise...I guess if that's the only way...I'll do it...just wondering what ideas you all might have!!

Ask Umpa / Brenda's Meatloaf

Hey Umpa!

Meatloaf is one of my family's favorite comfort foods. I know there are meatloaf recipes on the forum, but none of them are quite like mine...can you help me convert this to fts friendly!?!

1 lb. ground beef
1 pkg. dry onion soup mix
1 egg
barbeque sauce (usually 1/2 cup...I really don't measure...just "eyeball" it)
bread crumbs (I add bread crumbs until the meat holds together and is easily transferred to the baking dish...no longer "sticky")

Form into loaf, put in pyrex and bake on 375 for 50 - 60 min.

Really looking forward to how this is converted!!!

Ask Umpa / What to do with extra egg yolks!?!

Hey Umpa and everyone!!

I made the maple sausage egg muffins ( http://www.fattoskinny.net/index.php?topic=811.0 ) this past weekend and my family loved them...but since they have 3 more egg whites than whole eggs, I have many (I doubled the recipe) egg yolks left!

What can I make with egg yolks...I was thinking some kind of custard...but I thought I'd ask all the creative minds on this forum to see what we can come up with!! Are you up for the challenge!?!

Dinner Recipes / Sauerkraut and Sausage Skillet Dinner

This is one of my family's favorite meals! Hope you all will enjoy it too!!  :D


32oz. Sauerkraut (drained) 0 carbs.
2 lbs. Polska Kielbasa, sliced (mine is 6 carbs, but I'm sure you could find some with less)
2 Tbl. Olive Oil
1/4 c. diced scallions (1.25 carbs)
1/4 c. diced green peppers (1.5 carbs)
(The original recipe calls for 1 c. diced apples, I've decided to eliminate that, but if you wanted to, you could substitue jicima at 10 carbs)

In a large skillet, heat oil and saute' the onions and green peppers for 5 min. Add the drained sauerkraut (& jicima, if you choose to include it). Cover and cook over low heat for 25 - 30min., stirring occasionally. Meanwhile, cook the kielbasa according to package directions. Top the hot sauerkraut mixture with the kielbasa and serve.

Total carbs = 9  (19 if you add the jicima)
Serves 6

Well, I'm finally home from Mom's!! It's sooo good to be home!  :)

Usual breakfast:
2 egg omlet w/sausage, ground flax seed, cheddar cheese  5
2 cups of coffee   2

Lunch out:
hamburger w/cheddar cheese (no bun)
small salad w/sf dressing    1

Dinner:
baked tilapia
cauli mash (oh my goodness this was AWESOME!!!)  3  (I ate a double portion)
small salad w/sf dressing    1

Dessert:
sf jello w/wc  1

I drank lots of water and a couple caf. free diet cokes!

Total net carbs - 13

I'm at my Mom's in Florida, so this is a bit of a challenge, but I'll post what we've had so far and what's cooking for dinner!  ;)

Breakfast - 2 egg omlet w/cheddar cheese (3 net carbs)
                coffee w/heavy crearm (1 n.c.)

Lunch - (Ate with a friend at Panera Bread)
               Grilled chicken caeser salad w/o the dressing - just lettuce, cheese, & chicken - I brought my own sugar free dressing & large diet coke (2 n.c.)

Snack - roasted, lightly salted almonds (2 n.c.)

Dinner (cooking now)
               Baked pork chop w/grill mate seasoning
               Steamed broccoli & cauliflower (2 n.c.)

If Mom has sugar free jello, I will have that for dessert...if not...I guess I'll be sad until I can go to the store tomorrow and get some!! lol   ::)

Total net carbs - 10  (Is that enough!?! hmmm...maybe I'll have another cup of coffee after dinner that might add another one!)  ;D

General Questions / Carb. intake for very active kids?

Hey everyone! I have 4 very active (on swim team) kids who are by no means over-weight, but I want them to know what healthy eating is...my quesiton how many net carbs should they eat each day to maintain a healthy weight!?! I know that 20 net carbs is probably too low for them...I just need advice on that, if anyone has any!!
