The Mama Lupe Low Carb Tortillas taste like corn tortillas to me  :) 

Love Jicama! Peel, boil and shred then add cheddar cheese, salt/pepper, a little sour cream and pop in the oven for about 25 minutes 375-385 until bubbly and enjoy!  :)

Husband had appointment with cardiologist yesterday.  He had a weight gain and the doctor stressed healthy eating.  The doctor said there are 3 keys to weight loss - 1. eat healthy 2. eat healthy 3. eat healthy and if we needed 4. exercise!   :) Husband had been eating FTS with me for many months and done great but we had both figured out how to maintain!   ;D Anyway the cardiologist said “veggies and meats; stay away from the glue”!  Glue being the pasta, noodle, potato, breads!  Loved it that he approved of the FTS way of life!

Make the One Minute Muffin!  I make a double batch at breakfast and have half for treat later in the day/evening.  Here is the link and so easy to make
I use almond flour for mine and add 1 tbsp of heavy cream.
I mix up and pour in plastic bowl and micro wave double batch for 2.35 minutes  :o
                 One-Minute Muffin

I’ll post the original “1-Minute Muffin” recipe I found, but definitely look at the many variations below...

.   Melt 1 T butter in a coffee cup or measuring cup.
.   Mix in ¼ cup flaxseed meal, (can use almond meal, oat fiber, coconut flour or a  mixture, i.e. half flax, half almond)
.   ½ tsp baking powder
.   1 egg
.   Sweetener (to personal taste): 1 tsp xylitol or 1-2 Spenda pkts or 1 T S/F flavored syrup (Torani/Da Vinci)

Mix well – microwave approximately 50-60 seconds (depending on micro wattage).  Turn out and let cool.  Muffin top should look shiny and a little moist. Serve w/butter or cream cheese while warm or plastic wrap for later.

This is a yummy, easy cheescake treat.
I just wanted to point it out to some of the newbies!  I made last night and used True Lemon and it reminded me of Lemon Icebox Pie!

It's was very good with the green chili sauce. It wasn't as spicy as I was expecting. Had black soybeans and cole slaw that TooSweet recommended. Yummy
